Tuna meatballs with tomato sauce

Here is a recipe to make tuna meatballs with tomato sauce. A gourmet meal to please everyone at the table.

1. Pour the wine into a pot. Add the bouquet garni, bring to a boil, then add the tuna. Cover and cook for 5 minutes. Drain the fish and let cool. Strain the cooking juice and let reduce by half.

2. Meanwhile, squeeze the lemon. Wash, dry, thin out and chop the parsley. Remove the crust of the bread slices. Pour the cooking juices reduced in a bowl. Add the lemon juice, chopped parsley and bread slices. Knead everything by hand.

3. Blend finely the tuna and add with the eggs into the bowl. Mix well and place in the fridge for 30 minutes.
Prepare the tomato sauce: peel and chop the garlic. Blend the tomatoes with their juice and chopped garlic. Pour into a frying pan and place over low heat. Salt and pepper. Heat gently without boiling.

4. Shape the tuna mixture into small meatballs and roll lightly in flour. Heat the oil in a skillet and fry the meatballs, turning until golden brown. Transfer them into the pan with the tomato sauce and cook for 10 minutes over low heat.

5. Divide the meatballs on the plates and serve immediately. You can complement with fresh tagliatelle with grated cheese.
