Breaded chicken breasts

For a quick and easy meal, try this simple and satisfying fried breaded chicken breasts.

1. Cut the 2 cooked skinless chicken breasts into large strips. Prepare a bowl with 2 beaten and salted egg yolks, a plate with 150 g of grated mozzarella and a plate with 100 g of bread crumbs.

2. Coat the chicken strips in the yolks and roll in the mozzarella. Press to make sure the mozzarella sticks before rolling them in the bread crumbs. Transfer in a plate and place in the freezer for 20 minutes.

3. In a non-stick pan, brown half of the chicken over low heat with 1 tablespoon oil and 20 g butter. Turn to fry on each side. Set aside on the oven rack and repeat with the remaining chicken strips. Drain on paper towel.

4. Serve with mayonnaise with lemon and herbs, and a side of fresh pasta.
