Ingredients
1. Peel the potatoes, wash and cut into large cubes.
2. Peel, rinse the carrots and slice.
3. Heat the olive oil in a pot and let brown the potatoes and carrots for 10 minutes. Season with salt and pepper. Sprinkle with ras el hanout.
4. Add the peas, tomato paste, vegetable stock, stir and cook over low heat for 30 minutes. The vegetables should have absorbed the broth.
5. Serve hot with a leg of lamb or roast chicken.
