If you do not have much time to cook, here is an easy recipe for penne with carrots and peppers. The perfect dish for a quick meal.

Ingredients
1. Cook the penne pasta in boiling salted water and cook according to the packet instructions. Drain in a colander and add 1 tablespoon of olive oil.
2. Over high heat, sauté grated carrots in a pan with 2 tablespoons of olive oil for 5 minutes, stirring. Sprinkle with Espelette pepper and Thai pepper, salt and pepper.
3. Add the penne into the pan, stir and cook 3 to 4 minutes. Remove from heat and sprinkle with parmesan cheese and serve immediately.
