Swiss chard and tofu parmentier

With our recipe, cook a Swiss chard with tofu parmentier. A balanced dish that vegetarians will appreciate.

1. Cut the tofu into triangles. Combine the soy sauce, lemon juice, mustard, sesame seeds and olive oil in a dish. Salt and pepper. Add the tofu and marinate for 1 hour.

2. Peel and cut the potatoes into pieces. Immerse for 20 minutes in boiling salted water. Drain and mash into a puree. Dry them in a saucepan and stir in the milk, cream and butter. Season.

3. Wash the chard. Cut the leaves into strips then soak for 5 minutes in salted boiling water. Peel and slice the shallot. Cook for a few minutes in 1 tablespoon of oil with the chard drained, stirring with a wooden spoon.

4. Drain the tofu and let brown in a skillet, basting regularly with the marinade. Place 4 kitchen circles in the plates. Fill, alternating the mashed potatoes and chard. Finish with chard.

5. Arrange the tofu triangles above. Sprinkle with the marinade and garnish with herbs of your choice. Serve immediately.
