1. Peel, rinse the potatoes and steam for 20 minutes. Cut into slices. Butter the bottom of an ovenproof pot. Preheat the oven to 210°C (th. 7).

2. Divide the potatoes in layers, alternating with the meat. Salt and pepper each layer. Cover with the puff pastry, prick with a fork. Using a rolling pin, remove the excess of dough.

3. With the remaining dough, shape small leaves to decorate the top of the pie.

4. Whisk the egg yolk with 1 tablespoon of water and brush the top of the dough. Remove a small disc of dough in the center of the pie, so that the steam can escape during cooking. Place instead a rolled piece of cardboard.

5. Bake for 30 minutes. The pie should be golden. Serve immediately with a green salad.
