1. Put the noodles to soak in a large bowl of hot water for the time indicated on the package.

2. Peel and grate the carrot, wash the spring onions and cut into thin sticks, wash the bean sprouts and dry in a cloth. Peel the ginger and grate finely. Rinse, dry and thin out the coriander, setting the stems aside. Shell the shrimps.

3. Heat the oil in a wok and put the spring onions and carrots to cook over low heat, then add ginger, shrimps and coriander stems and cook for 2 minutes.

4. Pour in the poultry stock, bring to a boil and add the noodles and bean sprouts. Stir and cook for 5 minutes over high heat, stirring.

5. Remove the coriander stems, add the soy sauce and coriander leaves, stir and let stand off the heat for 2 minutes, covered, before serving in bowls.
