Chicken strips with Chinese egg noodles

Make this easy Chinese stir-fry with chicken and egg noodles for a one dish meal.

1. Rehydrate the shiitake mushrooms in a bowl of hot water for the amount of time indicated on the packet. Then, chopped them.

2. Place the noodles in a big bowl and cover with boiling water. Leave it to soften for the amount of time indicated on the packet, during that time prepare the other ingredients.

3. Peel and chop the onions, peel the garlic, degerminate it and chop finely, wash the bean sprouts. Chop the chicken into fine strips.

4. Heat 2 tablespoons of sesame oil in a wok and fry the onions on moderate heat. Add the chicken strips and stir-fry for 2 minutes. Incorporate the garlic,  the mushrooms and the bean sprouts. Season lightly with pepper and saute for 5 minutes.

5. Drain the noodles and throw them in the wok. Stir-fry for 5 minutes on low heat while stirring. At the end of the cooking process, pour soy sauce and the rest of the sesame oil. Sprinkle finely chopped cilantro, mix well and serve.
