Cod fish fillet with dill and tomatoes
Try this easy and healthy cod fish fillet dish with dill butter and tomatoes. A great light dinner for week nights.
1. Peel the shallots and chop finely. Wash the branches of dill, dry and chop. Place in a bowl and add the salted butter, white wine and pepper. Mix with a fork and then place the bowl in the fridge.
2. Wash the cod fish fillet and dry with paper towel. Place in the centre of 4 sheets of parchment paper on a silicone mat.
3. Wash the tomatoes, cut in quarters. Press lightly to remove the seeds and juice, then add the fish fillets. Add 2 teaspoons of the dill butter and close the parchments and seal tightly.
4. Preheat the oven at 180°C. Place the parchment parcels on a baking sheet and then place it in the oven. Cook for 9 to 10 minutes
5. Serve straight out of the oven with a side of steamed potatoes.
