Lemon sablé cookies
For dessert or snack, here is an easy and economical recipe for delicious lemon sablé cookies.
1. Let the butter soften at room temperature. Mix flour and sugar. Dig a hole in the center and pour the salt, yeast and add the softened butter in pieces. Work with your fingertips, until a sandy texture.
2. Add the whole egg and yolk with the lemon zest. Then knead with the palm of the hand to a smooth dough. Shape it into a ball and wrap with cling film. Place the dough in the fridge for 2 hours.
3. Preheat the oven to 180°C (th.6).
4. Sprinkle flour on a work surface. Roll out the dough to a thickness of 2 mm. Cut out the biscuits using a cookie cutter. Place them well apart on a baking sheet lined with parchment paper.
5. Bake for 10-12 minutes, until the cookies are golden. Let cool on a rack and brush with lemon jelly and sprinkle over poppy seeds.
