Strawberry and pistachio sablés

This is a very tasty recipe to make strawberry and pistachios sablés cookies. These treats are perfect for tea.

1. Prepare the sablés batter. In a bowl, add butter in pieces with icing and granulated sugar. Gradually stir in the flour with a pinch of salt. Add the egg and mix.

2. Once the dough is smooth, form a ball and let rest in the fridge for 30 minutes.

3. Wash and hull the strawberries. Cut into pieces and sprinkle with lemon juice.

4. Preheat the oven to 200°C (th. 6/7). Roll the dough on a floured surface. Cut with a round fluted cookie cutter of 9 to 10 cm in diameter.

5. Line parchment paper on a baking sheet. Arrange the sables cookies on it. Bake for 10 to 12 minutes. Leave to cool on the baking sheet.

6. Meanwhile, whip the cream with half of the icing sugar, then add the sugar gradually. Stop whipping as the cream makes stiff peaks.

7. Fill a pastry bag with the cream mixture and pipe out. Add strawberries and sprinkle with pistachios. Serve immediately.
