Ice cream cake with red fruits

Here is an easy cake recipe with ice cream and berries that will fully satisfy your guests.

1. Cover a springform pan with cling film. Wash and hull the cherries and strawberries. Cut the strawberries in two. Remove the ice cream from the freezer.

2. Spread the base of the mould with a layer of ladyfinger biscuits, overlapping to fill spaces.

3. Cover the corners of the mould with the strawberry halves (cut surface against the mould). Cover the ice cream with the raspberry ice cream, smooth with a spatula. Set aside for 1 hour in the freezer.

4. Unmould the cake 10 minutes before serving. Place on a serving dish. Divide the rest of the strawberries, cherries and raspberries on top. Sprinkle icing sugar and serve.
