Sicilian arancini

Here is the recipe for a culinary specialty, Sicily arancini. These stuffed with meat rice balls are delicious.

1. Cook the rice in 1 litre of salted water. Remove from heat and add the yolks, saffron, grated parmesan and butter. Mix well and leave to cool on a large dish.

2. Prepare the stuffing: fry the finely chopped onions in a pan with 2 tablespoons of olive oil and butter. Add the minced meat and saute over high heat. Pour in the wine, tomato paste, salt and pepper.

3. Leave to simmer for 20 minutes, then add the peas.

4. Use your hands to form the balls of rice after it has cooled and form a little well. Insert 1 teaspoon of stuffing , 2 or 3 cubes of mozzarella and seal with a second layer of rice. Repeat the process for the remaining ingredients.

5. Bread the arancini with the yolks and the bread crumbs. Deep fry them at (180°C).
