Fish and onion croquettes

Crispy savouries served on a bed of onions, everyone will love them!

1.Cut the fish fillets into small pieces and place it in a mixer. Remove the first layer of the small onions and chop them. Wash, dry and set the stems aside.

2. Separate the eggs. Set the yolks aside. Pour the whites in the blender with the onions. Add salt and pepper, blend coarsely. Form small croquettes and set aside in the fridge for 1 hour.

3. Heat the frying oil. Pour the bread crumbs on a plate, beat the yolks in another plate. Roll the croquettes in the yolks then in the bread crumbs.

4. Immerse the croquettes gently into the hot oil. Cook until brown for about 5 minutes on each side Drain on paper towels. Serve hot on a layer of onion stems.
