Wild Alaskan cod in spicy snow pea soup
You will be pleasantly surprised by the flavour and aroma of the spicy soup.
1. Wash the asparagus and cut them into sections of 3cm. Wash, dry and remove the seed of the bell peppers. Cut into strips. Hull the snow peas and cut in two. Wash, dry and loosen the cilantro.
2. Peel the onions, the garlic cloves and the gingers. Chop them finely. Rinse and dry the red chilli peppers. Remove the seeds and chop them finely. Chop the lemongrass.
3. Heat the oil in a saucepan and toss the onion, garlic, ginger, chilli pepper and lemongrass. Pour the stock and the coconut milk and add the asparagus, bell pepper and snow peas. Add salt and simmer for 8 minutes while covered.
4. Rinse the frozen wild Alaskan cod fillets under cold water, pat dry and cut into pieces. Pour them into the saucepan and cook for 8 minutes. Season to taste with lime juice and soy sauce. Sprinkle with cilantro leaves before serving.
