Potato-crusted cod
Regale your guests with an original cod fish in potato crust recipe.
1. Wash 400 g winkles, boil them in water with 100 g of coarse salt, pepper and lemon thyme. Let cool in their juice, and shell them.
2. Combine 1 tablespoon of wine vinegar, 3 tablespoons olive oil, fine salt, pepper and herbs (chives, chervil, basil, cilantro, parsley).
3. Preheat the oven to 210°C (th. 7). Peel 400 g potatoes, cut into thin slices without washing. Arrange in a shape of a flower on top of the 4 cod fillets, 160 g each. Salt lightly.
4. Sear the fish in a pan with 1 tablespoon of clarified butter, potato side on the pan for a few minutes. Then bake for 8 minutes.
Our cooking tip: place the cod fillet in the center of each plate, and place the winkles and herb vinaigrette around.
