Sauteed beef with prunes and cilantro

1. Peel and wash the carrots. Peel the onions, spring onions and garlic. Chop the onions, the garlic and cut the spring onions diagonally.

2. Remove the seeds and detach the broccoli florets. Wash and hull the cilanto, peel and chop the ginger, cut the prunes in two. Cut the carrots into fine strips.

3. Cut the beef into strips and set aside in the fridge. In a pan, heat oil and add the chopped garlic and the bird’s eye pepper (with its seeds removed). Leave to infuse for a few minutes and pass through a sieve to keep the perfumed oil. Put the oil back in the pan and saute the beef with the ginger and onions quickly. Remove the meat.

4. In the same pan, saute the carrots, the broccoli florets and the prunes. Add the beef, the soy sauce, the spring onions and the cilantro. Mix well.

5. Dress the dishes with grilled sesame and serve.
