1. The day before, soak the beans in cold water. The same day, blanch the ham in a pot of boiling water for 10 minutes. Drain and set aside.

2. Cut the tomatoes into cubes. Put beans in the pot with the ham, sausages, onions, thyme. Add the carrots, peeled and cut into pieces, cover with cold water, bring to a boil, then cook for 1 hour over low heat.

3. Preheat the oven to 120°C (th. 4). Rub the pot with garlic. Spread the pork rind at the bottom. Pour half of the beans. Cover with the ham and sausages cut into slices. Pepper, add the remaining beans and diced tomatoes. Pour the broth and cover.

4. Place in the oven for 3 hours 30 minutes. Before the end of cooking, add the duck legs and sausages grilled previously.
