Old-fashioned pork ribs

1. Cut 1.5 kg of pork ribs between each bone. Peel 600 g of potatoes with firm flesh, and cut into pieces. Peel 600g of carrots and cut into sections. Peel 3 large onions and cut them into quarters.

2. In a large pot, brown the meat on all sides with tablespoons of oil. Add the onions, fry a few minutes, stirring from time to time.

3. Sprinkle tablespoons of flour and mix. Salt and pepper. Add 1 bouquet garni and 1 meat stock cube, crumbled, and then pour water to cover. Place the lid to partially cover, and cook over low heat for 30 minutes.

4. Add the carrots, leave to simmer for 30 minutes, then the potatoes and simmer for another 20 minutes. Serve warm.
