Bean, carrot and tomato stew

If you want to prepare a vegetable based dish, then this recipe with simmered beans, carrots and tomatoes is for you.

1. Soak the beans for 12 hours in cold water. Drain. Peel and slice the onion and carrots. Peel and chop the garlic. Wash and cut the tomatoes into quarters. Peel and wash the baby spinach.

2. Heat the oil in a pot. Cook the onion and garlic for 3 minutes, stirring. Add the beans and tomato paste. Mix. Cover with water and bring to a boil.

3. Add carrots and tomatoes. Salt and pepper. Cover and simmer for 1 hour over low heat, stirring occasionally.

4. Ten minutes before the end of cooking, add the baby spinach and finish the cooking without covering .

5. Serve directly from the pot.
