Spinach and salmon quiche

We propose you to make a spinach and salmon quiche with this easy recipe.

1. In a bowl pour flour, salt and butter in small pieces. Mix and crumble with your fingertips. Add the egg and 10 cl water and form a ball. Place in the fridge for 30 minutes.

2. Preheat the oven to 210°C (th. 7). Roll out the dough on a floured surface and garnish with a non-stick mold.

3. Wash, dry and thin out tarragon. Wash, drain, remove the stalks and chop coarsely spinach. Sauté for 5 minutes in a skillet with olive oil. Arrange half the spinach on the dough.

4. Cut the salmon into strips, place on the quiche and cover with remaining spinach. Mix the eggs, cream, tarragon, salt and pepper. Pour the mixture over the spinach. Bake for 40 minutes watching carefully for coloring. Serve immediately with a green salad.

Our cooking tip: To give more flavor to the quiche, add some smoked salmon strips.
