Vanilla cheesecake

This is the original recipe for a cheesecake that you will find in New York. The only difference: a little vanilla to flavor the dessert!

1. Preheat the oven at 180°C (th. 6). Blend the sablés into a powder and mix them with butter. Grease a mould of about 24 cm in diameter with butter. Spread a parchment paper over the base and also buttered the paper. Spread the sablés  at the bottom, pack well, and let rest in the fridge for 2 hours.

2. Bake for 15 minutes. Remove from the oven and leave to cool. Adjust the oven at 100°C (th. 3/4).

3. In a bowl, mix the cottage cheese with sugar, a pinch of salt and the cornstarch. Add the eggs and the vanilla syrup. Pour the batter and bake for 1 hour.

4. Leave to cool for 20 minutes before removing from the mould, then set aside in the fridge until it is time to serve.
