Chocolate sablés

1. In a bowl, combine the flour, icing sugar and salt. Form a hole and add the butter cut in pieces, egg yolk and vanilla extract. Knead quickly to a smooth dough. Form a ball, and wrap with cling film. Refrigerate for 2 hours.
2. Preheat the oven to 210°C (th. 7). Roll out the dough, 3 mm thick. Transfer on a baking sheet lined wit parchment paper.
3. Using a cookie cutter, cut out round shapes of about 4 cm in diameter. Bake for 10-12 minutes, let the cookies cool on an oven rack.
4. Melt the chocolate in a double boiler, dip one side of the sablés into the melted chocolate. Gently make zig-zag with a fork.
