Wild asparagus omelet

Try this recipe and prepare in no time an omelet with wild asparagus. A great touch to an ordinary dish.

1. Prepare and rinse the wild asparagus. Blanch them for 2 minutes in boiling water.

2. Break the eggs in a bowl, then beat for an omelet.

3. Heat the olive oil in a pan. Add the white wine, then the chicken stock. Fry the asparagus for 2 minutes. Set aside. Pour the eggs into the same pan. As soon as it starts setting, add the asparagus. Leave to cook for 5 to 7 minutes over low heat while stirring constantly. Add salt and pepper gently.
