Asparagus and tofu salad

Slightly crunchy asparagus combine with tofu for a light and healthy salad. Perfect to start a meal.

1. Cut the ends of the asparagus. Cook for 5 minutes in water with 1 tablespoon of soy sauce with low sodium. Insert a tip of a knife to check for doneness.

2. Drain and cut into sections of 5 cm. Prepare the dressing by combining all ingredients. Cut the tofu into cubes and mix with the asparagus and seasoning.

3. Peel the spring onions and slice. Clean and cut sorrel. Add to the salad with the ginger and onion. Toss before serving.
