Quinoa with mushrooms and fried egg

For a balanced vegetarian dish, we offer a quinoa recipe with mushrooms and fried egg. This is very dietetics. You will love it!

  Ingredients

1. Rinse the quinoa under cold water. Put in a pan and pour twice its volume of water. Bring to a boil and cook for 15 minutes over low heat until the water is absorbed. Remove from heat and let rise for 10 minutes. Drain and set aside.

2. Wash and dry the basil. Rinse the mushrooms. Heat 2 tablespoons of oil in a pan and fry the mushrooms until complete evaporation of water. Salt and pepper. Add the quinoa, stir and continue cooking over low heat while preparing the eggs.

3. Heat the remaining oil with the butter in a pan and cook the eggs for 5 minutes.

4. Divide the mushrooms and  quinoa in 6 plates and topped with 1 fried egg. Serve immediately
