Quinoa salad with salmon

1. Rinse thoroughly the quinoa under cold water. Put ut it in a pan with 40 cl of cold water. Bring to a boil, cover and cook on low heat or about 15 minutes, until the water is absorbed. Let rise for 10 minutes, then put in a bowl to cool.

2. Wash, dry and thin out chervil. Squeeze the lemon and combine the juice with oil, salt and pepper. Gently toss to coat with the quinoa.

3. Divide the mixture into 4 glasses, place over the salmon slices and sprinkle with chervil.
