Fried eggs with almonds
We recommend you a fried egg almond recipe. Very easy to make.
1. In a bowl, whisk with a fork sherry vinegar and olive oil, salt and pepper. Add the peeled and minced shallots. Set aside.
2. In a saucepan, boil water with white vinegar. Crack an egg into a cup, gently transfer it into the simmering water for 2 minutes. Drain on a cloth. Poach the same way the 3 remaining eggs.
3. Beat lightly with a fork 2 egg whites in a bowl, pour the flour in a shallow dish, then the almonds previously crushed in a blender in a third plate.
4. Heat the grapeseed oil in a saucepan. Roll the poached eggs in flour, then in egg whites and almonds. Fry in hot oil for 2 minutes and a half and drain.
5. Rinse the arugula. Toss it with the dressing and divide on 4 plates, placing a fried egg on each.
Our cooking tip: You can add green asparagus to this salad.
