Carrot burgers

Here is a burger recipe with carrots that will appeal to carnivores such as vegetarians.

  Ingredients

1. Peel and chop 400 g of onions and put in a pan with 2 tablespoons of balsamic vinegar, salt, 40 g sugar and 20 g of butter. Let stew for 30 minutes with 3 tablespoons of water.

2. Peel and grate 800 g carrots, salt and pepper. Stir 3 beaten eggs. Shape the mixture into 4 patties. Cook in a skillet with 20 g of butter for 8 minutes on each side over medium heat.

3. Peel 100 g purple carrots, cut into chips using a peeler. Cut 4 burger buns in half. Place on each 1 tablespoon of chopped onion confit, carrot shavings, chopped chives, 1 carrot patty and a dash of salt.

4. Close the burger with the second bun and grate 15 g old mimolette cheese on top. Move the oven rack to the highest position in the oven and let the cheese melt.
