Cabbage soup with bacon
Need to warm up? Eat a soup. Here is an easy recipe to make a cabbage and bacon soup.
1. Remove the outer leaves of the cabbage, as well as the core. Wash and drain. Cut into strips. Blanch in a pan of boiling water for 5 minutes. Drain.
2. Peel the onions. Chop one and prick the others with the clove. Peel and wash the potatoes, then cut into cubes. Wash the celery stalk. Cut into sections.
3. Melt the butter in a pot and brown the onion, celery and cabbage for 10 minutes, stirring. Pour the vegetable stock, salt and pepper. Cover and cook for 30 minutes. Add the potatoes and the whole onion, and cook for another 20 minutes.
4. Brown the dry bacon in a nonstick skillet. Cut in half. Blend the soup, and divide among 4 plates. Add the bacon, and serve hot.
