Stuffed cabbage

  Ingredients

1. Remove the cabbage leaves without damaging them. Remove the hard triangular rib from the base of each cabbage leaf with a small paring knife. Wash the leaves and plunge in salted boiling water for about 10 minutes. Put them in a colander and rinse under cold water. Leave to drain.

2. Combine the meat with the onion and eggs in a bowl. Season.

3. Line the caul fat in a bowl. Arrange large cabbage leaves by overlaying.

4. Fill the bowl alternating one layer of meat stuffing and cabbage leaves. Finish with a layer of cabbage leaves and close by folding down the caul fat. Using kitchen twine, tie up all to keep closed.

5. Melt the butter in a cast iron pot. Cook the stuffed cabbage. Preheat oven to 200°C (th. 6/7)

6. Out of the heat, add the carrots, shallots, bouquet garni and pour over the wine and broth. Place in the oven for 2 hours.
