Brussels sprouts puree with bacon

1. Cut the stem of the Brussels sprouts, remove the damaged outer leaves and wash with water and vinegar, then rinse under cold water.

2. Score a cross into the base of ½ cm deep at the stem and dip them in a large saucepan of boiling salted water with 1 teaspoon of baking soda. Cook for 5 minutes. Drain.

3. Cook a second time in boiling salted water for 10 minutes. Drain and blend until a puree. Set aside.

4. Heat a frying pan with no fat added and fry the bacon. Deglaze with balsamic vinegar.

5. Reheat the puree with the butter cut into pieces and milk over low heat. Salt and pepper.

6. Divide the Brussels sprouts puree into 6 plates and sprinkle with bacon. Baste with the pan juices. Serve warm.
