Panna cotta with chocolate shavings

1. Soften the gelatin sheets in a bowl of cold water. Split the vanilla pod in half lengthwise.
2. Pour the cream, milk, vanilla and sugar in a saucepan. Place over low heat and bring to a boil. Remove from heat and remove the vanilla pod. Strain the gelatin sheets and add to melt whisking vigorously into the boiling cream. Divide the mixture into silicone moulds. Place in the fridge for at least 2 hours.
3. Using a peeler, make some milk and white chocolate shavings.
4. Mlet the dark chocolate in a saucepan with a tablespoon of water. Heat a frying pan with no fat added and toast the chopped hazelnuts. Unmould the panna cotta on 6 plates. Decorate with chocolate shavings. Drizzle the melted chocolate over. Sprinkle with crushed hazelnuts.
