Here is a recipe to cap off a gourmet dinner, a chocolate cheesecake. This dessert will delight your family and guests.

1. Cut a parchment paper in a ribbon of 8 cm wide. Stick it on the inside edges of the mould with a little water or butter, leaving it in excess of  2 cm. Preheat the oven to 180°C (th. 6).

2. Crush the cookies, add the butter, sugar and flour. Mix until sandy texture. Place the mixture into the bottom and sides and pack well. Bake for 10 minutes in the oven and let cool.

3. Melt the chocolate in a bain-marie and let cool to room temperature. Whisk ricotta and cottage cheese until it is thick and smooth. Add the cream and brown sugar. Pour the cooled melted chocolate and incorporate the eggs one by one. Finally, add the vanilla extract.

4. Pour the chocolate cream over the cookie mixture. Bake for about 50 minutes. Leave to cool and then refrigerate for 12 hours. Serve chilled.
