For Christmas, we suggest you to prepare delicious cookies that will please the whole family.

1. Preheat the oven to 6 (180°C). In a bowl, combine the flour, ginger, cinnamon and 4 spices. Add the butter into pieces and work the dough with your fingertips until the mixture has a sandy texture.

2. Stir in the brown sugar. Mix the cane sugar syrup, milk and egg yolk in a bowl. Pour into the previous mixture and stir until a soft dough. Place the dough on a floured surface and knead gently for a few seconds to make it smooth.

3. Roll the dough to a thickness of 3 to 6 mm, then cut to shapes with a cookie cutter in the shape of a star or tree, for example. Arrange the cookies on the baking sheet and put in the fridge for about 10 minutes.

4. Bake for 10 to 12 minutes (cookies should be golden but too dark). Let cool for a few moments, then, when hardened, place them on a rack.

5. For the glaze, stir in a bowl, gradually the icing sugar with egg white to obtain a thick liquid. Pour the mixture into a pastry bag and pipe onto the cookies, decorate as you wish. Keep the cookies in an airtight container.
