Roast chicken with olives
A quick and easy recipe to make a roast chicken with olives, croutons and thyme. A Mediterranean treat.
1. Preheat the oven to th. 7-210°C. Wash, dry, thin out and chop the parsley. make some small cuts in the skin of the chicken in several places and slide some parsley.
2. Peel and remove the green part of the garlic. Rub the bread with it, and add some oil.
3. Salt and pepper inside the chicken and place the garlic and oiled bread, thyme, rosemary and some green olives.
4. Put the chicken in a baking dish. Brush with olive oil, pour ½ glass of water in the bottom of the dish and add the olives. Bake for about 1 hour, basting regularly.
5. Remove from the oven, cut the chicken and serve immediately with olives.
Our cooking tip: For a more Mediterranean taste, replace parsley by basil under the skin of the chicken.
