Potato and chicken gratin
A little white wine will make this potato gratin with chicken a tasty dish. Your guests will compliment you on!
1. Cut the chicken breasts into strips. Place them in a bowl and sprinkle the Provence herbs. Add salt and pepper. Mix.
2. Peel and chop the onions and the garlic.
3. Melt the duck fat in a pan and fry the onions while stirring with a wooden spoon. Add the chicken and the garlic. Cook for 10 minutes.
4. Preheat the oven at 210°C (th. 7). Peel and wash the potatoes, then cut into slices. Pour them in a bowl. Season and sprinkle the nutmeg.
5. Boil the chicken stock with the white wine in a pot. Leave to reduce slowly.
6. Place 1/2 the potatoes in a gratin dish. Add the chicken. Cover with the remaining potatoes. Sprinkle with the stock and top with knobs of butter. Bake for 50 minutes.
