Peanut chicken, with bean sprouts and Chinese radish

If you are looking for a sophisticated and delicious dish to impress your guests, then try this chicken with peanuts, soy sprouts and radish.

1. Rinse and drain the bean sprouts. Peel the radish and cut into julienne. Peel and chop the shallot. Rinse and pat dry the chicken fillets and cut them into strips.

2. In a skillet, fry all the vegetables and coriander in hot canola oil. Add the chicken and cook for 3 minutes. Add the soy sauce and rice vinegar, salt and pepper. Set aside.

3. Prepare the peanut sauce: blend the peanuts and pour into a small saucepan. Add the lemon juice, coconut milk, soy sauce, ground coriander, turmeric and curry. Mix over low heat to get a smooth sauce.

4. Pour the vegetables and chicken in glasses and cover with the peanut sauce. Sprinkle with chopped coriander and serve warm or cold.
