Pork tenderloin with apricots
The sweetness of apricot combined with the flavor of pork tenderloin will appeal to all fine-dining lovers.
1. Wash the apricots, cut in half, pit and cut into quarters.
2. Heat oil in a pan and let brown the pork tenderloins on all sides. Salt, pepper and reduce heat. Add apricots, vegetable stock cube and pour water to cover. Drizzle a little honey. Cover and cook for 25 minutes over low heat.
3. Dissolve the cornstarch in 5 cl of cold water. Pour this mixture into the cooking juices and bring to a simmer, whisking until thickened.
4. Heat a frying pan with no fat and toast the flaked almonds. Cut the tenderloins into thick slices, divide among 4 plates with apricots. Drizzle with sauce and sprinkle with almonds. Serve immediately.
