Apricot tart

Just like the apple tart, apricot tart is a classic dessert. It is easy and quick to prepare.

1. Preheat the oven at th. 7 – 210°C. Crush the pistachios coarsely and set aside. Buttered the tart mould if necessary, prick the dough with a fork. Set aside in the fridge.

2. Place the butter parcels, caster sugar, almond powder, cornstarch, egg and cream in a mixing bowl. Blend until you obtain a smooth custard. Cut the apricots in two, remove the pits, cut the flesh into quarters.

3. Spread the cream on the base of the tart. Place the apricots on top and press gently. Sprinkle the crystal sugar and the crushed pistachios. Bake for 25 minutes.

4. Remove the tart from the oven and leave to cool. Remove from the mould and serve with vanilla ice cream.
