Ostrich steaks with porcini mushrooms
An original and refined recipe to impress his guests!
1. Clean the mushrooms with a damp cloth, remove the damaged parts and cut into pieces. Wash and loosen the grapes. Rinse, dry 2 sprigs of chervil and chop . Set aside the rest for decoration.
2. Heat 2 tablespoons of oil with the butter in a frying pan, put in the mushrooms for 5 minutes and add the grapes. Add salt and pepper and simmer over low heat. Heat a skillet with no fat added. When it is hot, add the ostrich steaks and cook for 5 minutes on each side. Season just before removing from the pan.
3. Deglaze the pan with the vinegar, scraping the juices with a wooden spatula. Arrange the steaks and the vegetables in preheated plates and sprinkle with sea salt. Drizzle the sauce from the pan. Serve immediately, decorate with a sprig of chervil.
