Club sandwiches with purple potato chips

1. The day before, peel the potatoes and cut into very thin slices. Wash and dry.

2. Heat the frying oil. Dip the potato slices in hot oil. Let cook for 2 minutes, until browned and crisp. Drain, transfer in a dish covered with paper towel and salt. Then, put in an airtight container overnight.

3. On the same day, wash and dry the arugula. Cut the cheddar into 16 thin slices. Toast the bread lightly.

4. Assemble the sandwiches with 1 slice of cheddar cheese, arugula, 1 slice of bacon, arugula again and finish with 1 slice cheddar.

5. Cut each sandwich, diagonally, into triangular pieces (each piece should be secured in the center with a pick or sword). Serve with purple potato chips.
