Ingredients
1. Peel the potatoes, rinse, dry and slice them very thinly with a mandoline.
2. Wash the purple potatoes with a brush, dry, and slice with a mandolin lengthwise without peeling them. Rinse in plenty of cold water, drain and dry thoroughly.
3. Heat the frying oil, immerse the potato slices preventing them from sticking to each other.
4. Fry for about 4 minutes, stirring constantly with a slotted spoon.
