1. Peel the parsnips. Cut into pieces and steam for 30 minutes. Mash with a food mill. Chop the beef.

2. Heat the milk and pour into the parsnip puree and mix. Stir in 50 g of butter in pieces. Salt and pepper. Mix. Preheat the oven to 200°C (th. 6/7).

3. Chop the hazelnuts.

4. Line a parchment paper on a baking sheet. Place round circles and spread the beef. Cover with a layer of mashed parsnips and sprinkle with hazelnuts and remaining butter cut in pieces.

5. Bake for about 10 minutes, until it is golden. Serve hot with salad on the side.
