Beef fillet and asparagus in sweet and sour sauce

A honey vinaigrette will flavour deliciously this beef fillet and asparagus dish decorated with chives and chervil.

  Ingredients

1. Cut the ends of the asparagus. Rinse and steam for 20 minutes.

2. Preheat the oven at 210°C (th. 7). Place the beef fillet on an oven tray. Drizzle with oil, add salt and pepper. Bake for 35 minutes.

3. During this time, heat the pan and sear the slices of bacon for 1 minute. Drain on paper towels and cover with aluminum foil. Set aside.

4. Prepare the sweet and sour sauce: mix the oil with balsamic vinegar and honey. Wash and dry the herbs. Chop the chives and loosen the chervil.

5. Cut the beef fillet into fine slices and divide then into 6 plates. Add the asparagus and bacon. Sprinkle the asparagus with the sweet and sour sauce. Chop the chervil and the chives and serve.
