1. Peel and slice the onions. Heat a frying pan and brown the bacon first, reserve and discard the fat from the pan. Pour in 1 tablespoon of oil and brown the onions.

2. Beat the eggs, salt and pepper.

3. Heat the remaining oil in a large nonstick skillet. Pour in the eggs, onions and bacon. Cook until the edges of the omelet are well taken. Flip the omelet and cook for 3 minutes, then roll. Serve immediately.
