Pineapple and mango salad

1. Cut the pineapples in two and then into quarters. Remove the skin and the core. Cut the pulp into cubes. Peel the mangoes and cut them into cubes.

2. Sprinkle the fruits with brown sugar and lemon juice.

3. Divide the mango cubes into verrines. Add the pineapple. Sprinkle with vanilla sugar and decorate with basil leaves or mint. Serve cold.
