Cream of cucumber with mint and soy

Start your meal with a cucumber mint cream and soy. A great combination to please everyone.

1. Peel the cucumber, remove the seed and grate. Mix the flesh with a few pinches of salt, place in a colander and leave to drain for 15 minutes.

2. Stack the mint leaves and chop finely with a knife (not shredded). Chop the garlic. Squeeze the flesh of the cucumber to remove the water and mix with the garlic, mint and the soy / cream mixture. Season with salt.

3. Divide the vegetables and sprinkle the mixed dried nuts.
