Scallop skewers with sesame grated carrots

Try this easy recipe to make scallop skewers with sesame grated carrots. An excellent combination of seafood and vegetables.

1. Preheat the oven on grill position. Rinse and dry the scallops, assemble scallop on 4 skewers and brush with oil.

2. Squeeze half a lemon. Peel and grate the carrots in a bowl. Add the lemon juice and olive oil. Toss to coat. Divide the mixture into 4 glasses.

3. Line a baking sheet with aluminum foil and place the skewers. Bake for 5 minutes on each side. Season with salt and pepper, sprinkle with sesame and arrange in the glasses.

Our cooking tip: Add chorizo to bring extra flavor and a slight smoky taste to the scallops. You can replace the grated carrots with a carrot and turmeric puree.
