Here is a recipe to make a vanilla scallop carpaccio. A delicious way to start the meal.

Ingredients
1. The day before, split the vanilla pod and collect the seeds. Marinate with olive oil in a sealed jar.
2. Rinse the scallops and dry thoroughly. Place in the freezer for 30 minutes.
3. Cut into thin slices and arrange on a large serving plate. Sprinkle with 2 tablespoons of vanilla oil and drizzle with lemon juice.
4. Add pepper, sprinkle with sea salt and if desired some parmesan shavings. Serve immediately.
